What is Organic Coconut Sugar?
Organic Coconut Sugar, or coconut palm sugar is a natural, unrefined sweetener obtained from the flowers of organically grown coconut trees. Our sugar is from Indonesian trees, where the high humidity and abundant rainfall provides ideal growing conditions. To harvest the sugar, farmers climb the tree and cut off the tip of a blossoming flower and the nutrient-rich sap is collected. Each Tree can yield an average of two litres of sap daily and once tapped, the sap will flow continuously for the next 20 years. The sap is heated to form a paste which is then transported to a processing centre for granulation. The resulting sugar crystals are dried, sieved and carefully inspected, ensuring that only product of the highest quality goes on to be weighed and, finally, packaged.
How can Organic Coconut Sugar benefit me?
Organic Coconut Sugar has a considerably lower Glycaemic Index (GI) rating than regular table sugar. Whilst regular sugar scores 100 on the GI scale, Coconut Sugar typically scores around 35. This means it gives a more sustained release of energy and helps to avoid sudden spikes in blood sugar and insulin. It is also a source of potassium which contributes towards the maintenance of normal blood pressure, normal muscle function and normal function of the nervous system. This can be used in place of high GI sugars like Dextrose or Maltodextrin in post workout shakes to provide a source of carbohydrates and a natural sweetness.
How should I use Organic Coconut Sugar?
Coconut Sugar can be used as a direct replacement for table sugar in an abundance of recipes and bakes. It’s natural sweet flavour, similar to caramel makes it a great addition to almost any sweet treat. Simply use this as you would regular sugar and follow your recipe as usual.
