A childhood favourite of mine was jam tarts and so I decided on making this picnic type food for the summer. The final result is what we have here today - presenting my Protein Jam Tarts recipe which will offer up nine of these little tarts. And don't worry, they are low carb and so easy to make!

Protein Jam Tarts Recipe Ingredients
For the base:

Mix together the dry ingredients, melt the coconut oil in the microwave and add to the dry mixture. Press the dough into a silicone cupcake tray and press the dough to form a slight hole in the centre of each. Bake at 180 degrees C for 10-15 minutes until golden brown. Leave to cool.
For the jam put 1 cup frozen blueberries with 1/2 cup water in a pan and simmer on medium heat for 10 minutes. Add in 1 sachet of gelatine and stir whilst on low heat until the mixture starts to thicken. Using a teaspoon fill each tart with jam.
Leave to cool before putting in the fridge to set. This will make nine delicious tarts.
