Black Forest Gateau Protein Muffins Ingredients:
- 1/2 cup Sukrin almond flour or oat flour (do not use ground almonds)
- 1/4 cup + 2tbsp Black Forest Gateau Whey Protein 80
- 1/4 cup + 1 tbsp cocoa powder
- 1/4 cup Truvia
- 1/4 cup 0% Greek yogurt
- 2 egg whites
- 1 x 100g pot of apple puree
- 1 tsp baking powder
- 1 tsp bicarbonate of soda
- 2 tbsp water/milk
- 1 tsp vanilla extract
- 1 & 1/2 cups frozen cherries
- 1 cup water
Black Forest Gateau Protein Muffins Method:
Pre heat the oven to 180 degrees C. In a bowl, mix together the Sukrin almond flour/oat flour, back forest gateau whey, cocoa powder, Truvia, baking powder and bicarbonate of soda.
Add in the Greek yogurt, vanilla extract, egg whites, apple puree and water and mix to form a batter. Pour the batter into a silicone muffin mould and bake for 20-25 minutes until fully cooked.
Whilst waiting for the muffins to cool, add the frozen cherries and water to a pan and leave to simmer until a thick cherry compote mixture is formed. Set aside to cool.
Take the muffins and cut out a little circle into the centre of each one to form a small hole and fill each with some of the cherry compote.
Next, make the frosting by mixing together the Greek yogurt and whey and pop it into a silicone piping bag and pipe on top of each muffin, covering the cherry centre. Top each with the remaining cherry compote mixture. Makes 7 muffins.
