Blueberry Almond Protein Cream of Rice Pudding Ingredients:

  • 1 scoop Cream of Rice+
  • 1 scoop Whey Protein 80 (Vanilla)
  • 1/4 cup unsweetened almond milk
  • 1/2 tsp almond essence
  • 1/4 cup frozen blueberries
  • 1/4 cup water
  • 1 tbsp flaked almonds

Blueberry Almond Protein Cream of Rice Pudding Method:

In a bowl, mix together the cream of rice, vanilla whey and almond milk. Put the bowl into the microwave for 45 seconds, take out and stir and put back into the microwave for another 30 seconds. Add a further 1/4 cup almond milk along with the almond essence to the mixture and stir to make the cream of rice a creamier texture. In a pan add the blueberries and water and leave to simmer for 10 minutes to form a blueberry compote. Once the blueberries have formed a thick compote mixture, pour on top of the cream of rice and finish with a sprinkle of flaked almonds.
