To me, pumpkin (and pumpkin pie) is the best thing about Halloween. It’s so deliciously comforting, versatile and autumnal, yet it’s lower in carbs than other sweet vegetables, such as sweet potato. From pumpkin pancakes to pumpkin porridge, there’s so much you can do with a scooped-out pumpkin. However, my absolute favourite way has to be this Pumpkin Pie Protein Almond Butter, made with GoNutrition’s delicious almonds, coconut oil and vanilla whey. Try it for the perfect afternoon snack with apple wedges, or just enjoy on its own by the spoonful.

Pumpkin Pie Almond Butter Ingredients:

Pumpkin Pie Almond Butter Method:

  1. Place the almonds in a high-powered blender and blitz until they start to form an almond butter, scraping down the sides as necessary (this will take around 15 minutes).
  2. Tip in the remaining ingredients and blend until the butter reaches your desired consistency. Stop to taste and sweeten as desired. Store in an airtight container in the fridge and enjoy by the spoon!
