Blend the tomatoes, garlic and half the philadelphia cream cheese. Then when slightly smoother, add remaining Philadelphia and blitz until smooth. Mix the pancake mix with the salt and the basil herbs and then use a fork to mix until completely smooth. Slowly add the water gradually until a thick consistency is reached (if it is too runny, it will not form a thick base in the pan) and will be difficult to flip Heat the pan with a bit of coconut oil, then pour the mixture in. Allow to cook for approximately 2 minutes, then remove from heat and use a spatula to lift the edges of the pancake. Then flip! Cook on the other side and allow the pancake to rise until it is thick and fluffy. Remove from heat, spread over the homemade pesto and then add steamed broccoli. Put back on a low/small flame and allow it to heat up again. Then take pancake from the pan and top with any more toppings you may fancy (e.g Chicken, fish cheese etc.)
