Ultimate Protein Pancakes recipe Method
If you have chosen to serve your Ultimate Protein Pancakes recipe with the warm stewed fruit topping (which I highly suggest you do) then begin by making this. Or you make this part in advance and heat it up when you are ready to use it.
Peel and chop the apple and cook along with the blackberries in a splash of water on the hob until both are completely soft. This will take approximately 10-15 minutes.
For the pancakes
Simply whisk all of the ingredients together until you get a smooth batter with no lumps! Keep whisking as hard as you can until little bubbles start to appear. Once you see these you are ready to cook your pancakes.
Heat a non-stick pan to a moderate heat and add the coconut oil. Pour approximately 1/5th of the mixture into the centre of the pan.
Allow the batter to cook for around 90 seconds before you touch it – small bubbles should start to form on the top and the outsides of the pancakes should begin to firm up which will allow you to get a fish slice or your chosen pancake flipping utensil underneath to flip the pancake over!
Cook for a further 90 seconds or so before placing onto a warmed plate while you cook the rest of your batter (nobody likes cold pancakes!).
Continue this process with the rest of your pancake mix.
