Oriental Cashew Chicken

Oriental Cashew Chicken | High protein, low carb grub

What could be better than combining delicious juicy chicken breasts with cashew butter? There aren't too many recipes that combine two such loved ingredients, but this one ticks all of the boxes.

This tasty dish ensures you can get a huge hit of protein, whilst keeping your carbohydrate intake low. After all, who said eating healthily had to be boring?


1/2 Pack of Zero Carb Noodles

1 Tablespoon Coconut Oil

1 Large Chicken Breast

100g Smooth Cashew Butter

1 Tablespoon Soy Sauce

1/2 Teaspoon Ginger

60ml Chicken Stock

Mixed Stir Fry Vegetables


1. Saute stir fry vegetables with the coconut oil until tender yet still crunchy, then set aside

2. Saute the chicken in the same pan, adding extra oil if necessary

3. When the chicken is cooked and the juices run clear, set aside

4. Drain and cook the Zero Carb Noodles in a pan for 2 - 3 minutes

5. Mix cashew butter, soy sauce and ginger in large saucepan over a medium heat, then add the chicken stock

6. Add the noodles, vegetables and chicken and cover in the sauce, then serve immediately
