Salted Caramel Protein Cups

Healthy Salted Caramel Protein Cups | Fun and simple - a recipe that you can enjoy at any time of day!

A delicious post workout treat or cheat day snack packed full of GN products! Just don't eat them all in one go... A big thanks to Lee (thepersonalnutritioncoach) for creating this delicious, protein cups recipe for us all to enjoy!

Ingredients:

135g Gluten Free Rolled Oats
25g Cashew Nuts
5g Organic Coconut Flour
35ml Organic Virgin Coconut Oil
90g Pitted Dates
5ml Salted Caramel Extractr
2 Eggs
40g Sugar Free Chocolate

Method:

In a food processor, pulse together the oats, cashew nuts, coconut oil and 30g pitted dates. The mixture will still feel crumbly but it will bind together when pressed down firmly. Put the cups in the freezer for 20 minutes.

In a small, microwaveable bowl, add the remaining 60g pitted dates. Microwave for 2 minutes stirring the dates halfway. This will make the dates soft. Take the dates out of the microwave and add the salted caramel extract and coconut flour to them.

Take the cups out of the freezer and add the date mixture to them.

Melt the chocolate in a microwaveable bowl and then add the chocolate to the top of the cups.

Place back in the freezer for 20 minutes to set

Take out and enjoy!
